Melting Moments


I've never met a person who doesn't like melting moments. They're just the best; two biscuits in one, plus a buttery icing! Each bite of the soft, powdery biscuits dissolves away and the sweet butter cream filling melts like the sweetest vanilla ice-cream on a summers day. These beauties are perfect for any season and a range of flavour variations can be made. Beware though, they are too delicious to refuse… we find them rather addictive.


What you'll need:
Biscuit:
250g butter
1/2 cup pure icing sugar
1/3 cup cornflour
2 cups plain flour
1 teaspoon vanilla essence
Extra flour (for rolling)


Filling:
60g butter, softened
1 cup pure icing sugar
1 teaspoon vanilla bean paste (see note)


What to do:
Preheat the oven to 160C and line two baking trays.


Combine the butter, icing sugar and vanilla in a mixing bowl. Beat on high using electric beaters until thick, glossy and pale. Sift in the flours and beat on low until a soft dough forms.


Roll teaspoons of the mixture into balls and place on prepared baking trays. Dip the fork into the extra flour, tap lightly to remove any excess. Press each biscuit with the fork to flatten lightly. Bake for 15 minutes or until only just coloured and transfer to a cooling rack.


While the biscuits are cooling, mix the butter, icing sugar and vanilla together into a paste. Set aside until the biscuits have cooled completely.


Once cooled, pair up the biscuits according to their size. Spread 1 teaspoon of filling onto one of the two biscuits and sandwich them together. Repeat for remaining pairs until you have a batch of melting moments. Enjoy!


NOTE: You can switch the vanilla bean paste for jam, citrus rind, dried fruit, passionfruit pulp or finely chopped nuts if you like.
